I can't resist the temptation of the homemade chili oil. Every time I made the oil, I can't wait to make this chili oil noodles for lunch or dinner to enjoy the fresh taste of all spices in the chili oil.
If you haven't made the chili oil, don't get discouraged, you can try this spicy cold noodles using store-bought Lao Gan Ma chili crisp. I found the dish tastes much better when served cold.
Ingredients
You'll need:
- 100 g noodles, any kind of noodles
- Half English cucumber or any vegetable you like
- Light soy sauce, to taste
- Salt, to taste
- Homemade chili oil
Notes and variations
- Noodle: I used thick noodles but you can use any noodles of your choice. Pasta, spaghetti, udon noodles, soba noodles, rice noodles all work for this recipe.
- Vegetable: I prefer cucumber because it is crunchy, easy to find in the store, and can serve raw.
Step-by-step instructions
Peel off the skin of the cucumber, rinse, and cut into thin matchstick-sized strips.
Cook the noodles and drain well, then place noodles on a plate or in a bowl. Add cucumber strips, soy sauce, chili oil, salt, and a few spoons of chili oil on top. Mix well.
Serve and enjoy!
