    Easy late-night noodle snack

    I had late lunch today and was not hungry at all at dinner time. Skipped the dinner, but the stomach started to complain in the early evening. Don't want something heavy, and don't want a complex preparation steps. So, made this instant noodle late-night snack  prepare a have a full dinner meal which might

    You'll need:

    • 110 g instant noodles

    Seasoning:

    • 1/4 tsp salt
    • 1/2 tbsp light soy sauce
    • 1 tbsp sesame oil
    • Half green onion, finely chopped

    Side dish:

    • a bunch of baby spinach
    • 1 egg
    • optional: spicy sauce (e.g. Lao Gan Ma)

    Instructions:

    Take a bowl, add salt, light soy sauce, sesame oil and finely chopped green onion to the bowl.

    Bring a pot of water to a boil, cook noodles according to the package instructions. When the noodles are almost done, blanch the baby spinach in the boiling water for 1 minute. Remove from the heat.

     

    Before transferring out the noodles, take ~3/4 cup - 1 cup of the cooking water to the sauce bowl prepared in step 1 to make a soup bowl. Transfer out the noodles to the soup bowl, keep the remaining cooking water. Optional: you can porch an egg in the remaining cooking water.

     

    Mix well the noodles in the soup bowl & Enjoy! Add a bit chili sauce if you like.

    Cooking Tips:

    • Add more cooking water to the sauce bowl if you like soup noodles;
    • Adjust the seasoning based on the water add in the sauce bowl to your taste
