    Spicy Noodles with Shrimps

    I got inspired by this recipe from maomaomom, who I followed for a while. From time to time, I changed her original recipes to add my own flavor.

    You'll need:

    • 400g spaghetti
    • 2 small carrots, peel, cut into thin strips
    • 16 medium size white shrimps, defrost first if frozen shrimps are used
    • Seasoning for marinating shrimps: 1/3 tsp salt, 1/8 tsp ground white pepper, 1 tsp corn starch, 1/2 tsp sesame oil
    • Cooking oil

    Sauce base:

    • 1 tbsp oil,
    • 1.5 tbsp peppercorn chili oil
    • 2 green onions, finely chopped
    • 1.5 tsp minced ginger
    • 2 cloves of garlic, minced (~1.5 tbsp)
    • ½ tsp ground Sichuan peppercorn
    • 1 tbsp sesame oil
    • 1 tsp salt
    • 1 tbsp light soy sauce
    • 1 tbsp premium soy sauce
    • 1 tbsp dark soy sauce
    • 1 tbsp Chinese black vinegar
    • ¼ tsp chicken broth mix
    • 1 tbsp LaoGanMa chili sauce

    Garnishing:

    • a handful of roasted sesame seeds (optional)
    • a handful of cilantro, finely chopped

    Preparation:

    • Peel off the skin of carrots, and cut into thin strips, transfer to a bowl, add a pinch of salt and mix well. Set aside

     

    • Remove the shells of the shrimps, de-vein, rinse and drain well. Marinate the shrimps with seasoning (1/3 tsp salt, 1/8 tsp ground white pepper, 1 tsp corn starch, 1/2 tsp sesame oil). Make sure to mix well shrimps with the seasoning.

    Instructions:
    Bring a pot of water to a boil, once the water is boiling, add a pinch of salt and a drop of oil, cook the spaghetti till al dente. Drain well.

    While the spaghetti is being cooked, heat a saute pan or fry pan over medium heat, add 1 tbsp oil, when the oil is hot, saute shrimps for few minutes till cooked. set aside.

    Sauce base:
    Reuse the pot used to boil spaghetti, heat it over medium heat, add 1 tbsp cooking oil and 1.5 tbsp chili oil, saute finely chopped green onion, minced garlic and minced ginger and ½ tsp ground Sichuan peppercorn for one or two minute or till aroma, turn off the heat. Add in 1 tbsp sesame oil, 1 tsp salt, 1 tbsp light soy sauce 1 tbsp premium soy sauce, 1 tbsp dark soy sauce, 1 tbsp Chinese black vinegar, ¼ tsp chicken broth mix, 1 tbsp LaoGanMa chili sauce, mix well.

     

    Add spaghetti to the sauce base, mix well.

    Add cooked shrimps, previously prepared carrot strips and finely chopped cilantro to the spaghetti, mix well

    Serve and Enjoy!
