My mom likes to make the pork rib soup in winter. A bowl of hot soup in a cold winter day will warm you up quickly, from the head to the toes. Another reason my mom likes to make pork rib soup is that she can use the soup (like meat stock) as an ingredient for making many other dishes like hot pot, soup noodles, hearty winter stews.
A friend recommended me an InstantPot, and it is perfect to make soup. It is so easy and fast, no cooking with oil, just combine ingredients and water, choose the program, and off you go. 40 minutes later, you will have delicious soup ready to serve.
This recipe is not a typical noodle recipe like the others. But it deserves a separate post for its versatility. Do serve it as a soup individually or as soup base for other dishes like this one.
You'll need:
- Pork spare ribs
- 2 green onions
- Fresh ginger
- Chinese cooking wine (optional)
- 1 Star Anise
Preparation:
- Take a big pot, fill it up with cold water and bring it to a boil. Then soak pork ribs in the boiling water till the ribs just changed the color (no pink anymore), drain, wash and rinse with cold water. Put aside for later.
- Wash and rinse the green onions, and cut into 3-inch length
- Cut 5 slices of fresh ginger
Instructions:
Place ribs inside InstantPot and add green onion, ginger, star anise and 1 tbsp Chinese cooking wine (optional)
Add water till reaching 5 or 6 cup mark in the pot. Cover the lid and place the pressure valve to “Seal” position. Press “Manual” button and set 35 minutes of cooking time.
When the program is done, wait another 10 minutes for the the valve to go down, slowly release the pressure then open the lid.

Notes
- Open the lid of the pressure pot when the inside pressure goes down. i.e. the valve goes down
- If you find the soup is a bit greasy to your taste, cook the soup in advance, then let it cool down to the room temperature. Then skim off the fat from the soup. Alternatively, cover the inner pot with a lid and place in fridge once it cools to room temperature, then skim off the fat before using.
- You can freeze the excess soup in a freezer-safe container and store it in the freezer. When you want to make a quick soup noodle dinner, it will become handy.
