Take a bowl, add salt, light soy sauce, sesame oil and finely chopped green onion to the bowl.
Bring a pot of water to a boil, cook noodles according to the package instructions. When the noodles are almost done, blanch the baby spinach in the boiling water for 1 minute. Remove from the heat. Before transferring out the noodles, take ~3/4 cup - 1 cup of the cooking water to the sauce bowl prepared in step 1 to make a soup bowl. Transfer out the noodles to the soup bowl, keep the remaining cooking water. Optional: you can porch an egg in the remaining cooking water.
Mix well the noodles in the soup bowl & Enjoy! Add a bit chili sauce if you like.
