Noodle with Hot Chili Oil

Ingredients

  • 100 g noodles
  • 1/3 cup of cooking oil
  • 2 tbsp chili powder
  • 1 tbsp minced garlic, if you like garlic, you can add 2 tbsp
  • 2 tbsp green onion, finely chopped
  • 1 tbsp minced ginger
  • 3 tbsp light soy sauce
  • 1 tbsp Chinese dark vinegar

Instructions

Sauce:

  • Take a bowl, mix light soy sauce and vinegar.

Instruction:

  • Bring a pot of water to a boil, cook noodles. Drain well, then transfer to a bowl
  • Pour 1 tbsp of sauce into the noodle bowl, add minced garlic and ginger and chopped green onion, chili powder on top of noodles. Adjust to taste.
  • Heat up ⅓ cup of cooking oil over medium heat. When the oil is 70% or 80% hot, turn off the heat and pour the hot oil into noodle bowl, mix well.
  • Serve and enjoy!

Notes

Cooking Tips:
  • Caution: handle hot oil with caution
  • If the cooking oil is not hot enough, chili powder won’t taste well. If the oil is too hot, it will burn the chili powder.
